Recipe Experiment #3: Easy Peach Cobbler

I LOVE PEACHES! There, I said it, my secret is out!  I would list fresh peaches as one of my top 5 favorite things about summer, maybe even in the top 3.  I will eat peaches anywhere, anytime and anyway they are prepared.  Grilled peaches with marscapone cheese? I'm there!  Juicy, fresh peaches? Hand them over!  Peach cobbler? Heck.  Yeah. Luckily for me, my mother makes, hands down, the world's best peach cobbler. It is so good, in fact, that I have flat out refused to ever attempt my own cobbler making, instead opting to call her up and whine, beg and plead until she agrees to make me cobbler the next time I visit.  Why bother with an unnecessary skill when I've got the master on speed-dial? As you might have read, this week has been...first-world hard on me.  I decided to forget about wallowing in my really trivial B.S. this weekend and focus on hanging out with friends and having loads of fun.  Unfortunately, my Saturday plans hit a bit of a bump (a real world snafu, not just my week's minor inconveniences) with a friend's major drama so instead I did some very boring adult errands and tried to enjoy the sun as much as I could.  I figured since I had to cancel my plans I would take the opportunity to attempt another recipe from my pile.  Tonight's dinner was provided by simply-delicious.co.za .  Given the domain name ending in "za", and that the recipe's ingredient list was metric, I'm going to go ahead and assume that it is from South Africa.  I really didn't research the site, I just stumbled upon the recipe on Pinterest (obsessed with Pinterest in a very unhealthy fashion btw) and thought it sounded amazing.   Bacon and M...

Eggs and Tots

I know it doesn't do much visually for anyone, but this "casserole" is 1. so yummy I'm gonna go all German on you and even claim it's UBER yummy 2. cheap 3. easy. It's also versatile and makes a lot but only 3 reasons are needed to be the unarguable trifecta so we're gonna have to save versatile and large for another day, sorry guys. My family actually makes this every Christmas morning, minus the asparagus and orange pepper (see? told you it was versatile). It's nice because it can cook while we open presents. I made it the other day because I had 18 eggs and a pound of sausage in the fridge. Single people should never make tacos. The problem isn't in the making of the tacos. They are quick, cheap and easy. The problem is that it's impossible to split the recipe, thereby forcing you to eat tacos for the rest of your natural life or until you get so annoyed, you banish the items to the back of the fridge and wait until they produce penicillin that you can hawk on the black market. And I'm sure some of you are going to say, well why not just use 1/2 lb of meat instead? But, dear readers, you cannot do that because then you would have to split the spice packet of taco seasoning and can of tomato sauce and that confusion can only lead to taco pandemonium. Nope, the only surefire way to avoid total chaos is to make the normal amount and suffer through the endless days of Mexican overload that follow. Ugh.

It's the end of the world as we know it

*Feedback, and then a voice comes over the loudspeaker* "And now-now-now, for the first time ever-ever-ever on this blog-blog-blog, a recipe-pe-pe..." Melodramatic? Never! This recipe is absolutely worthy of such acclaim, such pomp AND circumstance, such astounding appreciation that Paula Deen and Tyler Florence should kneel down and worship at the alter of it. Hmm. I guess Paula Deen wouldn't as it doesn't include any butter. But Tyler Florence could totally worship it. In fact, there is no reason he shouldn't. You know, it kind of burns my butt he isn't lighting a candle now! What a jerk! Take 8oz of cream cheese. Never use light cream cheese as that's an abomination to all that Philadelphia Cream Cheese stands for. Unless you are a certain somebody who eats cream cheese like it's going to be pulled from the shelves and rationed like WWII tin metal tomorrow. In that case, PLEASE use light cream cheese as I don't have a cute enough black dress rig...
